Documents to submit2 rules ▾
- All fire protection systems and equipment must be inspected and tagged by a licensed fire protection vendor before operations commence
- Leak testing documentation must be available for official review
Operating restrictions6 rules ▾
- Fire department vehicular access must be provided for fire lanes and access roads
- Clearance must be provided for fire department to access fire hydrants and connections
- No public seating is allowed within the mobile food truck
- Cooking equipment only operated when windows, service hatches, and ventilation are fully open
- Cooking equipment cannot be left unattended while hot
- Gas supply and container valves must be closed when equipment not in use

- Minimum 10 ft clearance from other mobile and temporary cooking operations required
- Minimum 10 ft clearance from building entrances and exits required
- Minimum 10 ft clearance from other vehicles required

- Solid fuel cooking appliances producing grease-laden vapors must be protected by listed fire-extinguishing equipment
- Workers must be trained in proper use of portable fire extinguishers and extinguishing systems
- Portable fire extinguishers must be selected and installed in kitchen cooking areas per NFPA 10
- Appliances using combustible media must be protected by approved fire extinguishing system
- Workers must be trained in proper procedure for simple leak test gas connections
- Workers must be trained in proper method of shutting off fuel
- Cooking equipment and ventilation system must be kept clean by regularly removing grease
- Fuel tanks must be filled to capacity needed for uninterrupted operations during normal operating hours
- Engine-driven power sources must be shut down prior to refueling from portable fuel container
- Engine-driven power sources must be separated from public by barriers
- Engine-driven power sources must be cool to touch before refueling from portable container
- Engine exhaust must be directed away from all buildings
- Engine exhaust must be directed away from other cooking vehicles and operations
- All electrical components must comply with NFPA 70
- Main shutoff on all gas containers must be readily accessible
- Portable gas containers must be upright and secured to prevent tipping
- Gas systems must be inspected prior to each use
