- Calibrated probe-type metal thermometer required for monitoring food temperatures
- Approved supply of potable water must be provided

- All food handlers must wear clean clothing and hair restraints if needed
- No smoking allowed in food facility or grill/deep-fat fryer area
- Food booth must be soundly constructed with overhead protection and large enough to accommodate all food and equipment
- Hand wash station must be set up with running water and disposable towels
- Utensil wash station must consist of 3 containers with soapy water, clean water, and sanitizing solution
- All equipment and utensils must be made of safe material, easy-to-clean, and non-galvanized
- All utensils and cooking equipment must be off the floor and inside facility except grills and deep fat fryers
- Live animals not allowed in booth or cooking areas
- Sanitizing solution for wiping cloths must be 50-100 PPM chlorine concentration
- Food must be from approved source, not stored or prepared in private home
- No open food can be stored or displayed at service counters
- Certain foods cannot be prepared without approved Hazard Control Plan
- All open food must be stored inside facility and off the floor
- Booth operator must identify approved location for liquid waste and oil disposal
- Cold foods must be held at or below 41°F
- Hot foods must be held at or above 135°F
- Required minimum cooking temperatures must be monitored
- Utensils or disposable gloves must be provided to minimize hand/food contact
- Employees must keep hands clean and wash hands frequently
- Employees must have no open sores or communicable diseases
