Local Operating Rules

Fire Marshal approval required BEFORE Health Dept approval. Annual fire inspection for units with generator, propane/CNG, Type I hood, or solid fuel. 3-compartment sink + hand sink required. Potable water min 30 gal, wastewater tank 15% larger. Max 12 hrs at same location/day. Must return to commissary after every operation.
